What are the characteristics of paring knives?
Paring knives have short blades from 2 1/4" to 4" long. There are three types of paring knives based on the shape of the blade: a paring knife has a tapered edge, a sheep's foot paring knife has a flat edge, and a bird's beak (or tourné) paring knife edge curves inward to a point to follow the curve of fruits and vegetables.
