The edge grain is known for its durability and is best for chopping ingredients.
Recommended to wash the boards in warm water and with a bit of dish soap (do not immerse in water completely) and dry when finished. If you worked with a particularly smelly ingredient and wish to remove any lingering smells, wash the board with salt and half a lemon to deep clean the wood. Keep the cutting board in great condition with mineral oil that can be rubbed into the wood after every 4-5 washes to keep the block looking new.
