What’s the difference between a gas deep fryer and an electric deep fryer? Which one should I choose?
Gas fryers (natural gas or propane) tend to be more efficient than electric fryers because they have a faster temperature recovery time (excellent for commercial kitchens). Electric fryers are generally easier to set up and there are countertop versions available for small quantities of deep frying.
What is the difference between a deep fryer and countertop deep fryer?
Deep fryer is designed for large batch deep frying. Deep fryers are meant for commercial foodservice kitchens and can handle deep frying all day. Once installed, commercial deep fryers cannot be moved except for maintenance cleanings. Countertop fryers are meant for smaller commercial kitchens and to fry smaller batches at a time. They’re not designed for deep frying all day long. They can be moved around as required.
