The Zwilling 7" Miyabi 5000 FC-D Santoku Knife has a flat cutting edge that is ideal for a chopping motion rather than rocking. It's made to be durable with a carbide steel core for excellent cutting edge retention and sharpness. The 48 layers of steel make up the Damascus design pattern on the blade while the blade is symmetrical so it can be used for both right-handed or left-handed chefs.
There is no finger guard so the whole edge can be used while the handle and half-bolster are seamlessly bonded for comfortable use. The blade has a Rockwell hardness of approximately 61 and a Pakka wood handle that is attractive with its steel mosaic pin and handle end cap. Recommended for hand wash only.
